Matzah-Chicken Casserole

Ingredients

  • 1 inch vegetable oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 3 cups cut-up cooked chicken
  • 3 pkgs Passover Matzah Stuffing Mix (such as Streit's)
  • 3 cups chicken soup
  • 2 beaten eggs
  • salt & pepper to taste

Instructions

  • Preheat oven to 350° F.
  • Heat oil and sauté onions and celery.
  • Mix all ingredients together.
  • Bake uncovered in a greased 9 by 13 inch baking pan for 1 hour.

Notes

You can omit the cut-up cooked chicken and serve this dish as a delicious side dish.
