Remove foil wrappers from each piece of gelt. Refrigerate to avoid any melting around the edges.
Place cookie dough on a parchment paper lined cookie sheets about 2 eaches apart.
Bake between 12- 15 minutes just until the edges are golden brown.
Remove from oven and quickly press one piece of Hanukkah gelt in the center of each cookie.
Notes
Variations are easy. You could make an indentation in the center of the cookie with the back of a rounded spoon and add colored frosting for a festive look. Blue for Hanukkah; other colors for other occasions. Other chocolate candies could be added to the center indentation, like Hershey Chocolate Kisses or chocolate chips.
