Poached Salmon with Avocado Chimichurri

Ingredients

Poached Salmon

  • 6 salmon pieces, poached
  • 1 lemon
  • water to cover salmon

Avocado Chimichurri

  • 3 avocados, peeled and diced
  • ¾ cup parsley, chopped
  • 6 Tbsp cilantro, chopped
  • 1 Tbsp oregano, dried
  • 3 garlic cloves, chopped
  • 4 Tbsp red wine vinegar
  • 3 Tbsp lemon juice
  • 6 Tbsp olive oil
  • salt and pepper to taste

Green Beans and Salad

  • 1 pkg ready to microwave green beans
  • mixed lettuces

Instructions

Quick Poached Salmon

  • Add salmon to a large frying pan with a lid.
  • Cover with water.
  • Add a few lemon slices.
  • Simmer until salmon is cooked and firm to touch about 15 minutes.
  • Remove from water and drain. Refrigerate covered until ready to use.

Avocado Chimichurri

  • Mixed all ingredients together.
  • Add salt and pepper to taste.
  • Place lettuces onto a large bowl or platter. top with poached salmon. Add green beans.
  • Garnish with lemon, shaped as you like.
  • Serve with Avocado Chimichurri on the side.

Notes

This recipe is easy to prepare in advance for a special lunch or cold supper.
