Simmer until salmon is cooked and firm to touch about 15 minutes.
Remove from water and drain. Refrigerate covered until ready to use.
Avocado Chimichurri
Mixed all ingredients together.
Add salt and pepper to taste.
Place lettuces onto a large bowl or platter. top with poached salmon. Add green beans.
Garnish with lemon, shaped as you like.
Serve with Avocado Chimichurri on the side.
